Beth's Surprise Pancakes...

Thank you Beth for sharing your recipe with me. Beth served this at her home about 15 years ago and I've been thinking about these yummy pancakes ever since...well I FINALLY got the recipe and made them yesterday.

OH MY GOODNESS - I totally forgot, these are NOT your mother's pancakes, these are like ginormous breakfast, butter dripping popovers. What a fantastic treat.

I seriously cannot recommend them enough - go make them NOW!!


Okay, go get some butter, flour, eggs and milk and start baking - how easy is that!


Put the butter in the baking pan and put it into your smokin' hot 425 degree oven til it's nice and melty and bubbly(please only use real butter - this is the type of recipe that demands it - don't even think about that fake stuff that comes in a tub)


Whilst melting the butter, mix the eggs, milk, and flour together - it will be a bit lumpy at first, but just keep whisking and it will get nice and smooth.




After the butter is bubbly and the oven is ready, pour your batter into the baking dish -no need to mix it in with the butter - they do it on their own and it's lovely.


Bake for 20-25 minutes until it's firm and done..like this...(it may puff-up in the middle too, but of course falls before a nice picture can be taken)



...and this is what your kids will look like when they see this pancake - see the "surprised" look?



Serving suggestions - well, as soon as it came out of the oven - we all just kind of pounced on it and ripped pieces off, butter dripping and all, and finished the whole pan in about 3 minutes. No plates necessary. How simple is that! :-)


Seriously, I have to say it again, make this TODAY - it tastes like a popover - what a breakfast treat!

Beth's Surprise Pancakes:
4 eggs
1 cup milk
1 cup flour
1/3 cup real salted butter
Melt butter in a 9x13" pan til melted and bubbly. Mix eggs, milk and flour until smooth. Pour mixture on top of melted butter and bake for 20-25 minutes in a preheated 425 oven.

this reminds me of the german oven pancakes that they serve at one of our favorite breakfast destinations. i've never ordered it, but i'm intrigued...

When I was a kid (back in the dark and distant past), I was taught to make this by a neighbor who moved away. I never thought I'd make it again, until I saw this.
